Pan Seared Pork Chops with Apple Compote

A perfect fall dish that utilizes the apples available at this time of year.
Yield: 4 servings

Ingredients
  • 4 pork chops
  • 2 tbsp butter or margarine
  • 1 tsp garlic salt & pepper blend
  • 4 medium apples, cored and diced
  • 1/2 c raisins
  • 2 tsp cinnamon
  • 1/2 tsp nutmeg, ground
  • 1/2 tsp ground sage
  • 1/4 c brown sugar
  • 1/2 c water
Cooking Directions
  1. Melt butter in deep skillet. Season chops with garlic salt & pepper blend. Over medium-high heat, sear each side until lightly browned (do not cook all the way through, just sear each side). Add apples, raisins, herbs, sugar, and water. Cover and cook over medium heat until chops are done (about 10-15 mins, meat should reach 160 degrees). Remove chops to plate and let stand.
  2. Reduce compote to medium syrup. Depending on the type of apples you used, it may look like chunky apple sauce or it may still look like slices of apples.
  3. Serve pork chops with compote on top.
